Chocolate Cheese Pie

Semisweet chocolate and cream cheese mixed with egg yolks, sugar, vanilla, and whipping cream. Spooned into a graham cracker pie crust and chilled.
Ingredients -
1 1/2 cups Fine Graham-Cracker Crumbs
1/2 cup melted Butter
1 (6 ounce) package Semisweet Chocolate Pieces
2 (3 ounce) packages Cream Cheese, softened
1/2 cup Sugar
1 teaspoon Vanilla
1/4 teaspoon Salt
2 Egg Yolks
1 cup Whipping Cream, whipped
2 Egg Whites
1/4 cup Sugar
 
Preparation:

1. Combine graham cracker crumbs and melted butter in small bowl. Press mixture into 9-inch pie plate. Chill.

2. Melt the chocolate in double boiler. Cool slightly.

3. In medium mixing bowl, blend softened cream cheese, sugar, vanilla, and salt.

4. Add egg yolks, one at a time to cream cheese mixture and beat well after adding each yolk.

5. Stir melted chocolate into cream cheese and egg yolk mixture. Chill until thickened, and then beat chocolate mixture smooth.

6. Fold whipped cream into chocolate mixture.

7. Beat egg whites to soft peaks.

8. Gradually add sugar and beat whites to stiff peaks. Fold chocolate mixture into egg whites.

9. Spoon into pie crust and smooth.

10. Place pie in freezer and chill several hours.

11. Remove from freezer 10 minutes before serving.

Only the finest chocolate should be used in cooking whenever possible, as the finer the chocolate, the finer the end result.
