Chocolate Chip Pie

Pie filling prepared from beaten eggs, brown sugar, white sugar, all-purpose flour, butter, canola oil, vanilla extract, chocolate chips and chopped nuts. Filling is spooned into prepared pastry shell and baked until filling has set and pie crust is golden.

Ingredients -
3 Eggs
3/4 cup packed Brown Sugar
3/4 cup Sugar
3/4 cup Flour
1/2 cup Butter, melted and cooled
1/4 cup Canola Oil
1 teaspoon Vanilla
1-1/2 cups Semisweet Chocolate Chips
1 cup chopped Pecans or Walnuts
1 (9-inch) Unbaked Pastry Shell
 
Preparation:

1. Beat the eggs until foamy in a large mixing bowl.

2. Add the brown sugar, white sugar, flour, butter, canola oil and vanilla and beat until well blended.

3. Add in the chocolate chips and nuts and stir to combine.

4. Pour the mixture into the prepared pie shell.

5. Bake for 1-1/4 hours at 325 degrees or until a toothpick inserted into the center comes out clean.

6. Allow to cool for 15 minutes.

7. Chill until ready to serve.

8. Refrigerate any leftovers.

The large green colored beans must remain on the vine upwards of a year before being harvested and can take months once harvested to dry and begin developing the characteristics we associate with vanilla. The flavor and fragrance of vanilla develops during the curing and drying process.
