Chocolate Peanut Pie

Unsweetened chocolate and butter mixed with sugar, brown sugar, milk, corn syrup, vanilla and eggs. Mixture is combined with chopped salted peanuts and spooned into a 9-inch pie shell. Baked, cooled, and served.
Ingredients -
2 squares Unsweetened Chocolate
1/4 cup Butter
3/4 cup Sugar
1/2 cup Brown Sugar, firmly packed
1/2 cup Milk
1/4 cup Light Corn Syrup
1-1/2 teaspoons Vanilla
3 Eggs
1 cup coarsely chopped Salted Peanuts
1 Unbaked 9-inch Pie Shell
 
Preparation:

1. Preheat oven to 350 F.

2. In a heavy saucepan, combine unsweetened chocolate and butter. Heat over low heat, just until melted.

3. Remove saucepan from heat and allow cooling.

4. In medium-mixing bowl, combine sugar, brown sugar, milk, corn syrup, vanilla and eggs.

5. Beat sugar mixture with hand or stand mixer until blended.

6. Stir in chocolate mixture with sugar. Beat until smooth.

7. Stir in chopped peanuts.

8. Pour chocolate pie filling into pie shell.

9. Bake 45-50 minutes (a knife inserted into the center should come out clean).

10. Cool thoroughly on wire rack.

An electronic scale will give the most accurate weights when measuring ingredients, especially useful for measuring chocolate.

Unsweetened Chocolate

Unsweetened chocolate is produced from equal parts cocoa butter and cocoa solids, known together as chocolate liquor. The melted butter and solids are cooled and the new solid is sold in blocks as unsweetened chocolate.
