Chocolate Pecan Jumbo Christmas Fudge Pie

Homemade pie crust prepared from chocolate wafer crumbs and melted butter. Crust is baked briefly to firm. Pie filling is prepared from softened butter, brown sugar, eggs, melted semisweet chocolate morsels, coffee grounds, vanilla extract, all-purpose flour and coarsely chopped pecans. Filling is poured into pie crust and baked until filling is set. Once the pie has had a chance to cool, filling is topped with whipped cream, chocolate syrup, maraschino cherries, and garnished with mint sprigs.

Ingredients -
1-1/4 cups Chocolate Wafer Crumbs
1/3 cup Butter, melted
1/2 cup Butter, softened
3/4 cup packed Brown Sugar
3 Eggs
1 (12 ounces) package Semisweet Chocolate Morsels
2 teaspoons Instant Coffee
1 teaspoon Vanilla Extract
1/2 cup All-Purpose Flour
1 cup Pecans, coarsely chopped
Whipped Cream, sweetened
Chocolate Syrup
Maraschino Cherries with stems
Mint Sprigs
 
Preparation:

1. Preheat the oven to 350 degrees F.

2. In a medium bowl, combine the chocolate wafer crumbs and 1/3 cup melted butter.

3. Mix to combine.

4. Firmly press the crumbs into the bottom and up the sides of a 9 inch pie plate.

5. Bake the crust for 6 to 8 minutes.

6. Increase the oven heat to 375 degrees.

7. In a medium mixing bowl, combine 1/2 cup softened butter and brown sugar.

8. Mix with an electric mixer on medium speed until well blended.

9. One at a time, add the eggs while continually beating.

10. Add in the melted chocolate, coffee grounds, vanilla extract, flour and pecans.

11. Stir to combine.

12. Pour the mixture into the prepared piecrusts.

13. Bake for 25 minutes.

14. Remove the pie from the oven and cool on a wire rack.

15. When ready to serve, pipe whipped cream evenly on the pie and drizzle with chocolate syrup.

16. Garnish with Maraschino cherries and mint sprigs as desired.
