Frozen Chocolate Peanut Butter Pie

Homemade pie crust prepared from graham cracker crumbs, white sugar, brown sugar and melted butter. Crust is frozen briefly to firm. Filling is prepared from sugar, cream cheese, creamy peanut butter, vanilla extract, whipping cream and cinnamon. Filling is topped with melted semisweet chocolate. Pie is frozen several hours before serving.

Ingredients -

Crust:
3/4 cup Chocolate or Plain Graham Cracker Crumbs (about 6 crackers)
1/4 cup White Sugar
2 tablespoons Packed Brown Sugar
1/4 cup Butter, melted

Filling: 
1/4 cup Sugar
4 ounces Cream Cheese
1/2 cup Creamy Peanut Butter
1-1/2 teaspoons Vanilla Extract
3/4 cup Whipping Cream
1 teaspoon Ground Cinnamon
1 ounce Semisweet Chocolate, melted

 
Preparation:

1. In a small mixing bowl, combine the graham crackers, white sugar, brown sugar and melted butter.

2. Mix well to combine.

3. Pour the cracker mixture into a tart pan with a removable bottom.

4. Press the mixture firmly into the bottom and up the sides.

5. Place the crust in the freezer while you are making the filling.

6. In a medium mixing bowl, combine the sugar, cream cheese, peanut butter and vanilla.

7. Mix with an electric mixer on medium speed until well combined.

8. In a separate bowl, combine the whipping cream and cinnamon.

9. Beat until stiff peaks form.

10. Fold in the whipped cream into the peanut butter mixture until combined.

11. Spoon about 2/3 of the mixture evenly over the crust.

12. Drizzle half of the melted chocolate mixture over the filling.

13. Swirl the chocolate decoratively into the filling.

14. Spoon the remaining filling over the top and spread evenly.

15. Drizzle with the remaining chocolate.

16. Freeze for 2 hours or more.

17. Soften slightly before ready to serve.

18. Serve and enjoy.
